First question to ask yourself: What type of feeling do you want when you walk into that room?
Exanple: Warm, homey, clean, relaxed, girlie...etc

Next: What color makes you feel that way?
Example: I want a kitchen that gives me a clean feeling when I walk into it. Colors I would choose are white, sky blue, and gray.
Now the hard question: What shade do you like and can live with? Think about your family too!
With this question, starts your research. You can search online for room colors and use design magazines to see what colors attracts you. Things you should also think about is what type of furniture you want for this room. Furniture is hard to replace, paint color is not. So you might want to pick out your furniture first or make sure whatever color you choose will match your current furniture. For your kitchen you will need to consider what will go well with the cabinets/floors in your kitchen.

Don't be afraid to go get sample colors. I normal get every color I think I would like for a room. Once you have narrowed it down and you are still unsure you can go and get sample of the actual paint color.
And if your still lost, look for a design piece. What I mean by this is go find something that inspires your room. Art work, dishes, a lamp, flower arrangement, furniture...etc.
Okay, look at the chair. It has four colors on it. Since I like the light blue on the chair I would consider using that shade for my wall color.
Another example would be the owl wall art. In this picture I am attracted to the olive green flowers and would consider that a wall color.
And for those of you who just prefer the white and beige walls, you can bring in color into you rooms with decorative accents and art work.
